Heat the ghee in a deep non-stick pan and add the mustard seeds and cumin seeds. Sindhi Vegetable Kadi or Kadhi - Veggie and Vegetable In a cooker heat oil put methi seeds,zeera and make it brown besan and cook by stiring continously till it becomes golden brown. Now add tomatoes & chilly paste and cook well now add spices, water and lemon juice. Vegetable Kadhi has the goodness of yogurt as well as vegetables fused in a very wholesome manner.
Steps to make Ambila vegetable Kadhi:
- Boil the veggies and chopped tomatoes with salt, turmeric and water.
- Mix curd, besan, ambula and 1/3 cup water well and keep aside.
- In a kadai, heat oil. Add poncha phutan and let them crackle. Add crushed garlic and green chilli and sauté till rawness is gone.
- Then add hing and curry leaves and saute for half a minute.
- Slow down the flame and mix the curd mixture. Bring to boil and mix it boiled veggies and cook for 2 minutes. - - Serve with steamed rice and enjoy. - Thanks
