- First wash the rice properly 2-3 times. Keep it aside from 5 minutes. In a utensil put ghee. After ghee melting add chopped badam kaju.
- Now add fresh grated coconut and stir 2-3 minutes. Put rice and jaggery in it.
- Add water and pinch of salt. Cook till it is done.
- After cooking divide the rice in three equal parts. In one part add orange food colour cover it and keep on low flame for 1 minute. Same way do for green colour.
- Keep another part of rice plain. Decorate as shown. Garnish with badam kaju.

Cover with a tight fitting lid. There are two ways you can make this Coconut Rice recipe - in the rice cooker or on the stovetop.
