Run a knife through the edges of the dhokla pan and invert it over a board or plate. Tap the pan to release the dhokla. Cut the tri color dhokla in desired shape and serve as it is or with some ketchup or dip of your choice. You may temper the dhokla if you wish to.

Instructions to make Tri color dhokla:
  1. Blanch the spinach and grind to make a smooth paste.
  2. Grind the carrot and make a smooth paste.
  3. Take a large bowl combine rava,curd,salt,sugar,lemon juice and one tbsp oil and one cup of water and mix well
  4. Keep aside for 15 mins.
  5. Add eno fruit salt in the rava batter just before making dhokla and mix it well.
  6. Divide the batter into three parts.
  7. Add spinach puree in the one part and carrot paste in the second part.
  8. Firstly pour the spinach batter in the greased plate and secondly pour the white rava batter and now at the top pour thr carrot rava batter.
  9. Steam for 10 mins.
  10. Heat oil in a pan and add the rai/black mustard seeds once it gets crackled and then add the curry leaves and green chilly.
  11. Pour it over the dhokla and cut into cubes.
  12. Enjoy tri color dhokla with coconut chutney

Cut the tri color dhokla in desired shape and serve as it is or with some ketchup or dip of your choice. You may temper the dhokla if you wish to. Your tri-color dhokla is ready to serve. Oil in a pan and crackle rai in it. This is India Independence day special recipe.
