Tri-Color Rotini A colorful version of a pasta salad favorite, Tri-Color Rotini means "colorful twists" and are two-inch lengths of thick screw-like pasta from Northern Italy. When I lived in New York, I used to get this delicious tri-color cookie from the Italian Bakery every year for the holidays.

  1. First in a bowl take white portion of egg. Using hand grinder grind well. Then add 2 cups of sugar. Mix until melt.
  2. Add yellow portion. Mix well.Add milk,and 1/2 cup butter. Grind. Then add flour and baking powder. Mix well.Add vanilla essence.
  3. Then divide the batter into 3 portion. In a portion mix coriander extract and in another portion add carrot extract.
  4. Preheat oven. Bake each cake for15 minutes in 150℃ in convection mode.
  5. In a bowl take100 gm butter. Grind,add 1cup sugar. Mix.
  6. Add vanilla essence2drops and add4tbsp milk. Mix and coat the cake putting one colored cake on another.
  7. Then cut into pieces and serve.

Growing up, I don't remember making these cookies at home. They always came from a bakery. Once I learned how easy they are to make, they have become a must for my Christmas sweet table. Stir the red food coloring into the first bowl of batter until evenly pink colored, then stir the green color into the second bowl of batter until evenly green colored, leaving the third bowl. To achieve that traditional look of the tri-colored polvorones, I would suggest using a pastry cutter to cut the cookies.
