Healthy Bharwa Karela, a delicious Bitter Gourd side dish that you can make for your everyday meals. Raw mango is used for the stuffing which gives it a tangy taste. Serve it along with Palak Dal, Phulka and Boondi Raita for an everyday meal. The spiced masala with besan, peanut, and spices are stuffed inside the bitter gourd cavity and then cook till it is crisp.

Instructions to make Traditional Bharwa meal:
  1. Take pointed gourd. Peel them. Take out seeds by making a longitudinal slit. Wash them and pat dry. In a bowl take roasted Besan, roasted peanut powder, salt, sugar, chilli, turmeric, coriander powder and mix well. Fill this powder into spiltted pointed gourd. Heat a non-stick. Add oil. When hot add mustard seeds, cumin and sesame seeds. Add asafoetida and put Bharwa pointed gourd carefully. Cover and cook on low flame for 20-25 mins or until cooked. Turn the pointed gourd in between.
  2. When they are cooked turn off the flame.. take out all pointed gourds in a bowl.
  3. For lehsun chutney in a manual mortar pastel add lehsun. Grind to make a paste. Now add red chilli salt and coriander powder. Mix well. Heat oil in tempering pan. Pour hot oil over grounded chutney. Mix well and keep aside. Chutney is ready.
  4. Fried chilli. Wash chillies. Make a longitudinal slit. Heat oil in broad pan. Add splitter chillies into pan. Slightly shallow fry. Take out in a dish. Sprinkle salt. And mix well. Chillies are ready to serve.
  5. For bajra roti. In a broad bowl take bajra flour. Add salt and make dough by adding little water at a time. Dough should be soft. Knead for 2-3 minutes. Make roti out of it. Cook on tawa as we do with normal rotis. Apply ghee and make all bajra rotis like this.
  6. Take a bronze plate. Serve Bharwa pointed gourd. Bajra roti. Chutney. Chopped onion. Fried chillies. And take buttermilk with masala.

Serve it along with Palak Dal, Phulka and Boondi Raita for an everyday meal. The spiced masala with besan, peanut, and spices are stuffed inside the bitter gourd cavity and then cook till it is crisp. I share some tips to decrease the bitterness of karela and make spicy stuffing to balance the remaining bitterness of karela. One of the traditional and popular dishes is Vangi Bath. The method of preparing consists of cooking brinjal with a little oil and then adding specially prepared spices or masala and then mixing with pre-cooked rice.
